Healthy Chicken Parmesan

2 - 1.5 oz bags Kay's Natural Crispy Parmesan Protein chips, I ran these through a food processor to make crumbs 3 - large boneless skinless chicken breasts (sliced each into in 4 long pieces) 1 cup freshly grated parmesan cheese (split in half) 2 eggs - beaten No sugar marinara sauce Dip each of the chicken pieces in the egg, then roll in the crumbs, then dip back in the egg and roll in Parmesan cheese. Place on a cookie sheet sprayed with Pam. Bake at 375 for 25-30 minutes, turning half way through. Place 3 pieces on plate top with warmed marinara sauce and more Parmesan cheese. Yummy! Serves 4. Ooh, sounds really yummy. I'll have to try that when I can eat again. Where do you find no sugar marinara? I have been searching and can't find sugar free spaghetti sauces or anything like that.

I get my marinara sauce at Trader Joe's - can't remember but it's really low in sugar, like 2-3 grams per serving. It's very hard to find low sugar in the groceryt stores, and when you do find it you always pay much more. Why is it healthy food costs more?

Great, thanks for the info. I'll have to have my mom take me to Trader Joe's - sounds like that's the place to go for a lot of good stuff. I didn't know we had one near here, but she said she went to one. Yeah, I always said it'd be easier to eat healthy if it didn't cost so darn much. I'm so excited to be on the way to eating like a normal person and only having room for healthy stuff. Now I've realized that the cost is balanced between cash and health, the health is worth the extra money.
