Recipe Challange (x-post)
I posted this to the RNY forum, but figured that this was probably the better place to post it:
I was thinking about creating some more protein balls... but I'm stumped... I have two great recipes for protein balls that I've created (thanks to someone on this site) and they are super yummy... the biggest ingredients in both creations are chocolate protein powder and peanut butter.
I would like to use my "Fuzzy Navel" protein powder, some SF peach jello, and .... ???? to make a new protein ball recipe. It seems to me that to make a protein ball that will be cohesive, I need some sort of peanut-butter like substance that will sort of stick it all together. BUT what can I use that is sweet and gummy and that will help me to make a sweet and peachy protein ball?
Okay so I know it's a challenge! Perhaps I should post it to the recipe forum also. But thought I would see if I could challenge you guys. I'm not much of a cook, so I thought I would see if it's even possible.
Ohhhh that sounds yummy...I think cream cheese might do it...you will have to tell me how they come out...I think I am drooling....lol...I would try warming it up a bit so it is not very cold tho..that would be hard to stir...make room temp or melt it a little room temp might just do the trick....

Here's the recipe I developed... .not quite sure how good it will be as it is still "setting" and chilling...
Protein Squares
1 8 oz package of Neufchatel Cheese
3 scoops of Syntrax Fuzzy Navel Protein Powder
1 box of SF Peach Jello Mix
1 cup of rolled unsweetened oats
Warm the cheese in the microwave for 15 - 20 seconds
Mix the jello with the cheese and then mix the rest of the ingredients in. This mixture will be more "wet" than the peanut butter type protein balls. Press the mixture in the bottom of a shallow oblong Tupperware dish. Refrigerate for four or more hours (sets the jello), and then use a butter knife to divide and individually wrap the protein balls/squares. Will make from 21 to 32 squares. Nutrition information for entire recipe: (102 g protein, 53 g fat, 54 g carbs, and 8 g fiber) Nutrition information per protein ball based on 32 balls per recipe: (3.2 g protein, 1.7 g fat, 1.7 g carbs 0.25 g fiber) Approximately 35 calories per ball.
An alternative would be to have some unsweetened granola and role the sticky moist unset protein balls in the granola and then wrap individually. This will increase the calories per ball)
Another alternative would be to use fat free cream cheese. I don't much care for fat free cream cheese, and the amount of fat per protein ball is relatively minor.
I think next time I'll try it with Almond butter.
Before I started "trying the RNY diet" (I'm Pre-op) I was a sugar fiend... and this last week I was really craving sweets (PMSing) and so I made this concoction, and it is good, but it's too sweet for me! (shock!)
So next time Almond butter... we'll see how that tastes. And I'll skip the jello ....
