This was just sent to me by a friend - I'm giving it a try tonight! Rice Pudding ~~~~~~~~ 1 small package SF vanilla instant pudding 16 oz light cottage cheese 2 snack size boxes raisins cinnamon (to taste) dash of nutmeg Make pudding according to the directions on the box, adding spices before you whisk pudding. Once the pudding begins to get thick, stir in cottage cheese and raisins. Place in frig and let set for about 1 hour to blend. This is so good and it was better yesterday than the day I made it because the raisins were plump yesterday!!! I hope if you like rice pudding you will give this a try. I could not believe how much it tastes like the real deal!!

the recipe I found aslo adds in some protein powder ?? cant hurt - extra protein ? Pineapple Dream 1 can crushed pineapple 1 package sf pudding - try the cheesecake variety or white chocolate mix together and add 16 oz container cottage cheese * chopped nuts - optional

I tried your recipe for Rice Pudding today.....and all I can say is: MMMmmm good!!! Thanks so much for posting it.....it is absolutely delish!!! And you're right, it really does taste like rice pudding......

I tried the recipe last night. It was delicious! I thought it tasted more like a cheesecake filling, which was more than FINE with me!

You know I made it again last night and your both right. It's like a cross between rice pudding and cheesecake filling. I like it, figure it's a yummy way to get protein in. and this is double duty with the milk and cottage cheese. I guess you could add protein powder for even more. Jan

I tried adding a scoop of vanilla protein powder to a batch I made last night. It didn't turn out very well, so I won't be doing it again.

I made this and gave some to my In Laws who hate cottage cheese. Of course I didn't tell them what was in in and they loved it! My Mom loves it too, but my picky hubby didn't like it. Jan

Thanks, Jan! I just tried this recipe last night and took it to work for breakfast today. DELICIOUS!!!! I soaked the raisins in water and a little rum extract for a couple hours before I mixred it. I gotta tell ya...I am NOT one to try cottage cheese with anything but salt and pepper. I am AMAZED at how delicious this is. Thanks again. Lunchie

Your very welcome! Funny thing I'm eating it right now, I used butterscotch pudding this time, turned out really good too!
