White Chicken Chili
Cooking Spray
2 pounds boneless, skinless chicken breast cut into bite size peices
2 Cups finely chopped onion
2 cloves garlic minced
2tsp ground cumin
1/2 tsp corriander
2 cans (4.5 oz each) green chilies, drained
1 Cup Water
1 can F.F. less sodium chicken broth
1.2 tsp pepper sauce
1 cup shredded monterey jack cheese (or mexican blend cheese)
1/2 C chopped fresh cilantro
1/2 C chopped green onion
Heat a large dutch oven or pot over medium high. Spray and add chicken, cook till cooked through stirring frequently. Remove and add onion and saute 6 minutes stirring frequently. Add garlic and saute 2 minutes. Stir in cumin and corriander, add chilies. Reduce heat to low and add in chicken, beans and broth. Bring to simmer, cover and cook for 10 minutes. Top each bowl with cheese and green peppers.
