Would anyone happen to have the recipe for.... Chef Dave's Chicken Cacciatore Meatballs He is the famous bariatric chef. I had the recipe and can't find it and am making them today. I think I know the basics but would like to have it to refer to. Thanks! ~Debs~

Chicken Cacciatore Meatballs By Chef Dave Fouts All the taste of chicken cacciatore with a new twist* Serving Size: 6 Ingredients: · 1 pound ground chicken** · ½ cup seasoned bread crumbs · ¼ cup grated Parmesan cheese · 2 tablespoon fresh parsley, chopped · ¼ cup white wine · 3 teaspoon black olives, chopped · 2 cloves garlic, minced · ½ teaspoon dried basil · ½ teaspoon salt · ¼ teaspoon pepper · 4 cup tomato sauce (canned and not seasoned) Directions: 1. In a large bowl, thoroughly combine ground chicken, bread crumbs, Parmesan cheese, eggs, parsley, basil, white wine, garlic, black olives, salt and pepper. 2. Form mixture into 1 ½ inch meatballs. 3. In a large pot, add tomato sauce and bring to a light simmer. 4. Add meatballs to sauce and let simmer covered for 25 minutes or until meatballs are thoroughly cooked. DO NOT STIR for 10 minutes or meatballs may break apart. *CHEF'S NOTES: Great stuffed between whole wheat pita with low-fat mozzarella cheese. **In addition, ground turkey can also be used instead of chicken.
