Yummy cracker dip!!
Here's a modified recipe for 'Nieman Marcus Dip'.
**If you are sensitive to fat, I suggest staying away from this recipe**
1 Pkg Oscar Meyer Ready to eat microwave bacon slices
1 C. shredded Cheddar cheese
2 green onion stalks
2 oz. Pkg slivered almonds
Enough Mayonnaise to moisten (use light or fat free)
Optional- mix Mayonnaise and Sour Cream for a lighter 'sauce'
Microwave all 12-15 slices of bacon strips; cool. Either use scissors to cut up bacon (makes a chunkier texture dip)- or lightly process in your magic bullet (makes a smoother texture dip). Mix bacon and shredded cheddar cheese in a bowl. Slice green onions (or use magic bullet again). Add to bacon/cheese. Add slivered almonds. Mix with enough mayo (or mayo/sour cream mix) to hold ingredients together in a creamy texture. Enjoy or refrigerate for a couple days.
I spread a bit of this dip on low fat crackers. The combo of bacon, cheese, and almonds makes for a great protein snack.

This sounds yummy...I wonder if you've ever sub'd lowfat cream cheese for the mayo...it's a thinner consistency than reg so sometimes I use it instead of mayo in chicken salad. Or maybe even ff plain yogurt instead of mayo...for those sensitive to mayo, that might be another alternative. And it would up the protein even more!
