Protein Bar Recipe

I've been searching for a recipe to make high protein cereal bars. Do you have any ideas? After searching numerous websites, I've combined ideas and thought I'd give this a try--any suggestions changes before I proceed would be appreciated (if only I could find those Quaker Q-Smart Protein Peanut Butter Chocolate Chip Snack Bars!) 1/2 c. butter 1 c. peanut butter 1/2 c. tiny chocolate chips (optional) 2 c. high-protein, low-sugar granola or cereal 1 c. chopped nuts (i.e. peanuts, almonds, sunflower seeds) In saucepan, melt butter and peanut butter. Mix with remaining ingredients in a bowl. Press into greased 9x13 pan. Chill and store in refrigerator.

If I could substitute something else for the butter, I think I would try this. I get the dumping from greasy foods as much if not more than sugar.

Ive seen no-sugar-added chocolate wafers (for making candy) in the Bulk Food store..breaking them up into tiny pieces could be a less sugary substitue for the choclate chips? Nancy B

I eat Kashi cerael. It has like 13 or 15 grams of protein to a cup, so this would be a good cerael to use in these. Sounds yummy, and since I used choc protein powder, might even add a scoop of this to the butter and peanut butter when I make them. Will try and make this evening and let you all know how they come out. The Kashi is sticks and twigs, according to dh, so Ill try them. If you dont have or dont care for Ka****ry the Oat and Honey granola bars and just crunch them up, they only have 5 grams of sugar to 2 bars. Just some thoughts. I'll use the kashi first and let you know what I think of them. Shrinking Rhonda

That recipe would never do for me, too high in fats. Plus I'd have to substitute soynut butter for the peanut butter or it'd give me migraines. I've been trying to figure out how to moisten Kashi Go Lean so that it'd stick to itself as a bar and yet not add a lot of calories. Till then, a friend on the RNY board gave me the following link for a protein bar. You could use no sugar added applesauce instead of butter, and reduced fat peanut butter. That would cut the fat down a bunch. Please let us know your final recipe, and how they turned out. I'd like to make some, too. Thanks, Lynn

You could use PB2 in place of the peanut butter....
