Egg Salad Recipe anyone?

I LOVE the egg salad you can buy in the deli section of Wal-Mart, but it is really high in fat. I've searched all over the internet, but I can't find a recipe for a good egg salad. Any ideas?

Crystal....put 2 eggs into a pan and bring to a boil as soon as the water boils put a cover on the pot and shut off the heat and let eggs sit for 15min...hard boiled eggs come out perfect...and then use which ever mayo you tend to like...mix it together and if you like it warm eat right away if not chill until it is cold...either way it is yummy...I lived off of this for the first 3 weeks of my mushy stage...Good luck.... jannine 357/164/157

I have even made them using a low fat salad dressing EX: low fat bacon ranch dressing, honey mustard and mayo. Light sour cream with some dried beef. Add some sweet or dill pickle relish, bacon bits ( depending on you food stage) for flavor and the extra protein can't hurt. Dill is also a nice addition or a dash of Old Bay seasoning. I have heard of people using cream cheese and mayo. Get creative try different things. Betty Jo Lap RNY 7/11/03

Hi Crystal! I, too, am an egg salad fan! Personally I use a couple of boiled eggs, some light mayo and about a teaspoon of olive juice. If you prefer sweet pickles, use the no sugar added sweet pickle juice. If you want, add a little celery to give it some crunch. Enjoy! Freddie

I like to grate my hard boiled eggs on a cheese grater, makes the egg salad creamier. I then use a little salt, pepper and garlic powder to taste. a little mayo and then I get creative with the mustard. I like to use jalepeno mustard or horseradish mustard for a little extra zing. otherwise i just use regular yellow mustard. I add the mayo and mustard slow until i get the consistancy and flavor I'm looking for. MMMMMmm I still eat a lot of eggs as they "hold" me over well as breakfast.

I make my egg salad pretty much the same way as Sue W, but I recently made some with French's Honey Mustard, wow it was good! I add crushed or sliced black olives as well, and before surgery...bacon bits. Sigh, I miss those days lol. Donna

Since surgery, i like egg salad a whole lot, not quite sure why, i didn't much care for it before.... but i seem to change the recipe every few days, i mean i eat egg salad a couple times a week! sometimes i put finely chopped celery and onions in it, sometimes i don't, sometimes i use diffrent mustards, (but i like real mayo, (hiding my head in shame...LOL) but just a small amount.. (trying to make it sound good..lol) sometimes i put olives or pickles, it seems I don't get tired of it because i change it so much!
