Ginger Peach Parfait

I think this recipe could be made with substitutions on flavors; Jell-O & diet soda, etc. Also using SF crushed cookies for texture to layers! Have fun - Enjoy! Ingredients: 1 (10 g) box jello sugar-free peach gelatin mix 1 cup boiling water 1 cup diet ginger ale 2-3 cups non-fat vanilla yogurt, divided 1 - 2 scoops of protein (unflavored, peach or vanilla) Cool Whip, SF or Lite (optional) Directions: Disolve Jello in the boiling water and allow to cool to luke warm. Add the ginger ale cold from the fridge. Mix and chill to a thick syrup consistancy. Then, using a whip, mix in 1 to 2 cups of yogurt, (1 cup will give you a firmer finished dessert and the more you add the softer it will be). Chill until almost set but still workable. Spoon into 4 glasses until about 2/3 full. Spoon in a layer of vanilla yogurt, 1/4 cup(or less depending on the size of the glass) per glass. Fill remaining room in glass with the Jello mix. Chill. At serving, top with the Cool Whip Lite or SF if desired. *A sprinkle of cinnamon may be added if desired. I think this recipe could be made with substitutions on flavors; Jell-O & diet soda's. Ooops! Sorry, I forgot to mention that I always add protein powder to yogurt and mix well before adding to remaining ing. Also I have used a combination of protein powders, (vanilla & Nectar peach) to equal 2 scoops...(2 scoops because I like it a little more dense/thick).
