Zucchine Pizza Bites

This is one of my favorite recipes from when I was doing low carb recipes. I dont see why it wouldnt work for everyday type foods for after WLS. Of course I havent had my surgery yet but I do plan on eating these as soon as I can since I like them so much. 1 medium zucchini 3 tbsp pizza sauce (what every kind you use) 2 tbsp tomato paste 1/4 tsp crushed dried oregano 3/4 C shredded reduced-fat mozzarella cheese 1/4 C shredded parmesan cheese 8 pitted ripe olives 8 slices pepperoni 1. preheat broiler and set rack 4 inches from heat 2. Wash zucchini and trim off ends. Slice 1/4 inch thick on diagonal to make 16 slices Place zucchini on wire rack over nonstick cookie sheet. 3. Stire pizza sauce, tomato paste, and oregano together in cup. Spread scant teaspoon of sauce over each zucchini slice. Toss together cheeses in bowl. Top each zucchini slive with 1 tbsp cheese mixture, pressing down into sauce. Arrange 1 olive on tope of 8 pizza bites. Place one pepperoni slice on each remaining 8 pizza bites. 4. place cookie sheet under broiler and broil 3 minutes or until cheese melts and zucchini is tender. Remove from broiler and serve immediately. Makes 8 servings. Calories 75, Carbs 3g, Total Fat 5g, Protein 5g. I would imagine if you cant eat the pepperoni that you can do without...other than that I hope you like it because they taste great.... soulwrtr

Ooo Deni these are so yumm'ay I just had to say thank you! I do believe these will quickly become my family's favorite ~ way to easy and quick to make too!

Glad to hear it...these are my family favorites also and I can even get my kids to eat them...its like they dont even realize that the crust part is made out of zucchini.
