Get your hands on my favorite reference cookbook, The Taste of Home Cookbook binder. You can find it at Amazon, Target, big bookstores, etc. The fish and seafood section includes not only recipes, but lots of info on selecting, and preparing various fish and tells you what they look like and their main qualities.
I find that the secret to fish is to not overcook it. Start out with milder varieties like tilapiia and mahi mahi. Then move into the stronger flavored fish like cod or salmon. Feel free to use yoru favorite multi-spice seasonings instead of complicated recipes. To jazz it up, try simple salad dressing glazes or marinades..
To cook, I usually do an oven bake or broil, but tilapia cooked stove top can be ready in 5 minutes!

I love salmon and tilapia. Tilapia has very few calories too. I like to bake it. Kroger(if you have one near you)has frozen tilapia filets in a bag and I just thaw it out in the fridge and then bake it at 425 for 10 min. I add Emerils southwest seasoning(kinda like cajun). I have also cooked salmon on my george forman grill for about 5 min. Its good marinated with teriyaki sauce. If you are only 4 weeks out tilapia may go down better than salmon.
