recipes for one
Hi, I've been lurking on this board for a while now, and have gotten some good ideas from you guys. But I have a problem. I live by myself, so I only need to cook for me. Do you have any good, healthy recipes for one person? I don't have a lot of freezer space, or I would use the bigger recipes and just freeze them. I'm in stage 3 of my diet, so I can eat most foods, as long as they are relatively soft, but no bread, rice or pasta. I have been able to tolerate pretty much everything so far. Any suggestions would be great.
an easy lunch for 1 is 1/2 C Ricotta Cheese, 1/4 Spaghetti Sauce and 2 TBS Mozzerella Cheese, melted in the microwave. It's quick and full of protein. or the low carb pizza recipe, 1 fajita size tortilla, make crispy in the oven, then cover with spaghetti sauce, mozzerella cheese and turkey pepperoni (or whatever else you like) an coo****il cheese is melted!
