Great LoCarb Protein Peanut Butter Cookies
Got these from the Publix .. Can't remember how much protein per cookie but easy to figure out. I think it's 3g. Each cookie is 70 cal. No sugar.
(and yes the recipe is correct -- no flour)
1 cup peanut butter
1 cup splenda granulated (next time I'm using 3/4c..I thought they were a little sweet)
1 egg
1 tsp vanilla extract
Mix all together. Form 1 inch balls and put on ungreased baking sheet.
Should have 24 cookies. Use fork to press down with criss-cross design
Bake at 325 for 8-10 minutes til puffy and toasty on top. Don't overcook.
Let cool for 5-10 minutes and remove.
Very tasty. I took these to church and they were gone in a flash.
