I have a craving for banana nut muffins and want to know what kind of flour are we allowed to use? I was going to substitute splenda for the sugar in the muffins and extra banana for any fat in the recipe. Does anyone have a good recipe for these?? Thanks, Maria

That's pretty funny... I just made these... they're still warm! They have a lot of fiber. I only used 1/2c cake flour and the rest was bran, wheat germ, and flax meal. I used splenda and honey. Honey is has a really high glycemic index, but I think the moisture benefits of using 2 table spoons or so in this recipe were worth it. I also only used 2 bananas... that's all I had, and will use the apple sauce butter substitute next time... also didn't have any apple sauce.
