That's pretty funny... I just made these... they're still warm! They have a lot of fiber. I only used 1/2c cake flour and the rest was bran, wheat germ, and flax meal. I used splenda and honey. Honey is has a really high glycemic index, but I think the moisture benefits of using 2 table spoons or so in this recipe were worth it. I also only used 2 bananas... that's all I had, and will use the apple sauce butter substitute next time... also didn't have any apple sauce. I added a dash or two of clove, allspice, nutmeg, and cinnamon.
