Imitation crabmeat or tofu recipes????

I am only four weeks out and just now able to eat proteins (except for beef). Alot of it doesn't agree with me and I don't really like meat that much. Does anyone have any recipes using imitation crabmeat or any good Tofu recipes?

here's my favorite thing to do with crab meat. Shred it or chunk it and saute in a little butter. Add Ragu alfredo sauce and shredded cheese. Put in pan in oven till cheese is melted. MMM it is sooo good. You can also make crab salad by adding mayo and whatever seasoning you like, and can even add some vegies like onion or bell pepper. Its also good with just a little butter and some lemon squeezed on it. Hope this helps!! Mary

You can add tofu to practically anything. I'm doing my tofu cheesecake tomorrow in fact. You can add it (as well as TVP, or textured vegetable protein) to ground turkey or lean ground beef for tacos or spaghetti sauce. You can put chunks of tofu in your protein shakes. You can marinade it in soy sauce, garlic, and ginger (over night is best) and fry it up to golden brown and use in a stir fry. My favorite is tofu pate'... tofu, some garbanzo beans, lemon juice, dried parsley and/or cilantro, a pinch of curry powder and/or cumin, nutritional yeast, (NOT the same as the baking yeast!!! Get nutritional yeast at a health food store or online), a little garlic powder... I think that's about it. I use 2 pkgs of firm tofu to one regular can garbanzo beans. I use a lot (1/4 cup maybe?? I'm not a measuring kind of cook) of the nutritional yeast; it's a great way to get your B vitamins in and it gives it a kind of 'cheesy' flavor. You blend it in the blender until smooth and use it as a dip. I use Trader Joe's veggie flax chips. I scoop a lot of the tofu pate up with one chip, so there's more tofu eating than chip eating. If it seems too thick, you can add a little water to get it moving, but it should be the thickness of thick pudding. It will set up just a bit when refrigerated. Beans are a great source of protein and if you mix them with a small amount of whole grain you get all the amino acids to form a complete protein. You can do hummus and SMALL (you don't want to kill yourself with carbs... again, lots of dip, a little chip kind of thing I think is best) wedges of toasted whole wheat pita or rye crisp crackers. I eat black beans and brown rice (1/3-1/4 rice and the other beans). You can season your rice with a pinch of cumin, some lime juice, and chopped fresh cilantro, then top the whole thing with salsa and a dallop of low fat sour cream. I make a sauce with oil, almonds, nutritional yeast, and tofu that goes really well with this... I just had it tonight, but with 2-3oz chili lime chicken and sliced avocado. You can eat this whole bowl of food with a few of those Trader Joe's veggie flax chips.... Let me know if any of this sounds good to you and you need help with it... the last sauce is kind of tricky but I've already written a novel here!
