Bean Salad

A lot of people after surgery cannot tolerate meat, thats not me, but I love this bean salad recipe as a protein alternative. It calls for chick peas but you can use any kind of bean/pea. I eat it over a salad or over whole wheat couscous. You can also cook whole wheat macaroni to add to the mix if you'd like. I like using the chick peas because they are very mild tasting, have 7g fiber, and 7g of protein per 1/2 cup. onion, chopped bell pepper chopped 2 cans chick peas(regualar size can) 2 jars pimentos 1c cooked whole wheat macaroni noodles(optional) -Combine all of this together in a bowl. Dressing: 1and 1/2 cup splenda 1 cup white vinegar 1/2 cup olive oil -combine in a sauce pan and bring to a rolling bowl. Turn off heat and cool to room temperature. Pour over bean mix and refridgerate. Better if done the day before. It is wonderful with a sprinkle of Feta cheese on top. This is also a wonderful summer dish to take a family gathering! Candy

Hi Candy...your bean salad looks D-lish. I'm going to try it. Someone posted on one of the other boards about Barilla Plus pasta that has 17 grams of protein in each serving. I think I'll use it when I try this.... Thanks, Laura A.
