Chicken and vegetables soup
I just had this last night and it was so awesome!
1 Rotisserie chicken
1can of white beans (undrained)
1 yellow squash
1 zuchinni squash
1 pkg. frozen broccoli
1 small sweet onion
1 pkg baby spinach
1 cup tomato sauce or 1 1/2 cups stewed tomatoes
2 1/2 cups water
garlic powder
salt and pepper
2 TBLS. olive oil
In a large saucepan over med hi heat pour in olive olive oil with chopped onion and let saute while you are chopping the 2 squashes, stir occasionally. Throw in chopped squashes along with broccoli. Pour in can of beans , water and sauce, stir. Then season with salt and pepper and garlic powder. Bring to a boil. Let boil on med for about 10 min, then reduce heat to low and let cook for about 25 min. Then throw in baby spinach for the last 10 . You also may sprinkle with parmesan cheese...
MMMM so yummy and it makes alot so you can freeze!
