DIABETIC CAKE RECIPE MADE W/APPLESAUCE

Im looking for recipe for light cake like a regular cake you would make from box but its made w/applesauce in place of the sugar i had an co worker that makes it all the time and she refuses to give up the recipe and she said it's and diabetic cake she makes from scratch and she makes her own chocolate icing from scratch. If anyone knows of such an recipe I would love to have it. The cake is light as air and delicious Thanks

Whenever I make any type of cake/brownies from a box I replace the oil with sugar free applesauce instead. Jackie

FRESH APPLE CAKE (Diabetic) 2 1/2 c. sifted flour 4 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. nutmeg 1 tsp. salt 1 c. black walnuts 2 eggs 1 c. soft butter 2 tsp. vanilla 1 tsp. sugar substitute 4 c. fresh grated apples Mix and sift all dry ingredients. Add butter, vanilla, eggs and sugar substitute. Beat until well blended. Stir in grated apples and nuts. Pour into well greased 13x9 pan. Bake at 375 degrees for 40-45 minutes. Cut into 2 x 2 1/2 inch pieces. Makes 20 pieces.

Hello this is a recipe from ALLRECIPES.COM It had very good ratings. I made it and I thought it was very good. I used splenda instead of Brown Sugar Twin If you use the brown sugar splenda don't add as much it will make it too sweet start with 1/4 cup and increase by a 1/4 cup. Sugarless Applesauce Cake "A good cake for diabetics." INGREDIENTS: 2 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/2 teaspoon salt 1 1/2 cups unsweetened applesauce 3/4 cup brown sugar twin 2 eggs 1 teaspoon vanilla extract 1/2 cup raisins DIRECTIONS: 1. Preheat oven to 350 degrees F (175 degrees C). Spray an 8x4 inch loaf pan with cooking spray. 2. Sift together flour, baking powder, baking soda, cinnamon, nutmeg and salt. Set aside. 3. Beat the eggs until light and add sugar twin. Add applesauce and vanilla. 4. Add flour mixture and beat until smooth. Fold in raisins. 5. Pour batter into loaf pan. Bake at 350 degrees F (175 degrees C) for about an hour, or until a toothpick inserted into cake comes out clean.

Here is another recipe I just made for friends they loved it. I got it from the Splenda,com site you may want to visit they have wonderful recipes also they have reviews with some other suggestions, I omitted the molasses it was still good enjoy Old Fashioned Applesauce Cake Serves: 8 Preparation Time: 25 Minutes Cooking Time: 30 Minutes Total Time: 55 Minutes What you need: 1 cup all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 2 teaspoons cinnamon 1/2 teaspoon ginger 1/2 cup reduced-calorie margarine 1/4 cup molasses 1/2 cup egg substitute 1 teaspoon vanilla extract 1 cup SPLENDA® Granular 1/2 cup unsweetened applesauce What you do: 1 Preheat oven to 350 degrees F. Spray an 8x8 inch metal cake pan with vegetable cooking spray. 2 In a small bowl, stir together flour, baking soda, cinnamon, and ginger. Set aside. 3 In a large mixing bowl, beat margarine and molasses with an electric mixer on high speed for approximately 1 minute. 4 Add egg substitute and vanilla and blend on high speed for 30 seconds. Mixture will be very liquid. 5 Add SPLENDA and beat on medium speed until very smooth, approximately 1 1/2 minutes. 6 Add flour mixture and applesauce and beat on low speed until mixed, approximately 45 seconds. 7 Spread batter evenly into prepared pan and bake for 30 minutes at 350 degrees F. I just have to say, what's wrong with people that they think it's okay to hoard a s/f diabetic cake recipe??? Did you try any of these? If you did, how did they turn out? I'm curious; I've been craving a rich chocolate cake lately and wonder how cake can be low calorie!
