Protein Power Soup

Protein Power Soup (Recipe for 7 regular servings) 4 tbsps olive oil (or more if you need more calories, or part coconut oil) 14 ounces canned diced tomatoes 1 10-oz packages frozen spinach 1-2 cloves garlic ½ cup raw chopped onions 2 chicken bouillon cubes ¼ tsp Rosemary, dried ½ tsp Thyme, dried 2 pounds raw chicken breast (or other meat/fish/poultry) 4 cups frozen Oriental vegetables (or any mixture of lower carb fresh or frozen veggies) 8 ounces Mushrooms, raw, cut in pieces Water - depending on how soupy you want it Bring to a boil then simmer in stock pot for about 1 hour. If meat is frozen, cook an extra 20 minutes. If meat is already cooked, subtract 20 minutes. If veggies are not frozen, wait until 5-20 minutes before the end of cooking to add them to the pot. Things like broccoli need more cooking time; fresh spinach just needs to be wilted. Let soup cool a bit before picking out poached chicken breasts, dicing & returning them to pot. Nutrients in 1 Serving (stuff not in parentheses above): 251 Calories 10.9 g Fat g 27.7 g Protein 7.07 g ECC Divide into individual servings & freeze. Can use any veggies and different meat/fish/poultry mixtures.

I made this tonight in the crockpot and just let it simmer for hours. I had most of the ingredients already and just skipped the onion and garlic. The whole house smells delicious now. Even my BF said it smelled great (although he'll probably put it over some rice.. He makes pots of rice and then whatever I cook he puts it on the rice) Thanks for sharing.. it's really cold here right now so this will hit the spot!

I made this soup last night and it was delicious...thank you! I have one question. How many ounces are in one serving? I am really trying to up my protein intake but I noticed I could only eat about 1/4 cup of the soup last night. Thank for your help!

Unfortunately the recipe didn't give me portion size, so I can't answer that. I would make sure I get enough meat in my serving to be sure I get the protein. I tend to eat the protein first out of any soup and then finish whatever I can of the vegs and liquid.
