one way to use leftover rotissiere chicken
Today, for my lunch, I pulled about half the meat off of a cold chicken breast from a rotissiere chicken I picked up Friday afternoon. I cut it into small pieces (smaller than 1/2 a teaspoon). Then, I put 1 tbsp of olive oil into a skillet. Into the warming oil, I chopped some onion and let it start to brown and soften. Then, I added about a tbsp of chopped green pepper (frozen, always in my freezer!) and a tbsp of diced tomatoes (always on hand in my fridge or cupboard). Once this was all warm and yummy smelling, I added the chicken meat and stirred and stirred till it was all hot and ready to eat. I did not eat this with anything else... I ate it just as it came out of the skillet. It was yummy and I did not even add any seasoning of any sort. The only seasoning was whatever the grocery store deli put on the rotissiere chicken.
The only bad part? The olive oil had more calories and fat than all the other ingredients together! Anyone got a better suggestion? Non-stick spray won't cut it as you need a good bit of wet to brown and cook those onions and such!
That sounds yummy. Olive Oil is good fat. I use it all the time. Personally, in my two years since surgery I've never watched my fat. Only my carbs, really. But that's just me.
I buy the rotissiere chickens all the time. They Freeze well too. I'm going to try that recipe the next time I get one.

I use pretty much ONLY olive oil these days for cooking when it calls for oil... Just much healthier than soybean and such...
I am still counting everything--everything you find on the average nutrition data part of a food label--total calories, fat calories, total fat, sat fat, trans fat, cholesterol, sodium, total carbs, fiber, sugars, and protein. I am sort of obsessed with it and my Nut says just to watch the total calories, total carbs, and protein. Plus the fiber if you don't think you're getting enough (which I know I am not). But, I have it all in my spreadsheet and have been watching it all for the longest time, so changing now is sort of like abandoning the rest of that stuff! LOL No, seriously, I plan to change the spreadsheet on Feb 1st and try jus****ching those things as my Nut suggested and see if it helps me obsess less over what I'm eathing without causing more of a stall of my weight loss. I'm at the same weight for like 2 weeks now (298 or 299) and it is killing me!! I need to measure again! LOL
As for this recipe, I was thinking again (ouch, that hurts!). I prefer onions, peppers and tomatoes myself, but you could use any sort of veggies that you can sautee--mushrooms, zuchini, etc. I think folks should take that chicken, whatever their favorite veggies are, and go for it! Make this recipe idea their own creation!

I have some obsessive behaviors myself. I think the first year I went to the extreme. Which I don't think was bad and I lost the majority of the 165lbs that I've lost the first year. Now having the issue of still losing and not wanting to lose anymore. I'm 5'9" weighing 150- wearing a 4-6. I'm happy where I'm at, not wanting to gain or lose.
I can say even now, I rarely weigh myself. Usually only when I go for a docs visit. It helps keep me sane. LOL maybe if it's been a while between visits I will weigh myself at my parents.
