Hi Evie...i found this at a website called ALLrecipes...I am sure you can change the brown sugar to the one with spleanda...if I find anymore I will send them along

Everything Nice Nuts

"I wasn't satisfied with any spiced nut recipes I tried, so I created my own crunchy concoction. They're great to take to a party or to give as a tasty holiday gift."
INGREDIENTS:
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/8 teaspoon ground
cardamom
1/8 teaspoon ground cloves
4 1/2 teaspoons water
2 cups mixed nuts
DIRECTIONS:
1. In a microwave-safe bowl, combine the first six ingredients. microwave, uncovered, on high for 1 minute. Stir; heat 30-60 seconds longer or until syrupy. Add nuts; stir to coat. Spread into a microwave-safe 9-in. pie plate. Microwave, uncovered, on high for 4 to 4-1/2 minutes or until syrup is bubbly. Immediately spread onto a greased baking sheet. When cool, break apart.

Homemade Smoked Almonds

"Mom passed this recipe on to me-- much to my husband's delight! We like to take the flavorful nuts to all sorts of gatherings, from fancy holiday affairs to casual luncheons."
INGREDIENTS:
1 egg white
2 teaspoons garlic powder
2 teaspoons celery salt
1/4 teaspoon salt
1/2 teaspoon liquid smoke
flavoring
3 cups whole unblanched
almonds, toasted and cooled
DIRECTIONS:
1. In a bowl, whisk egg white until foamy. Add garlic powder, celery salt, salt and liquid smoke; stir until blended. Add almonds and stir until well coated. Evenly spread almonds in a 15-in. x 10-in. x 1-in. baking pan coated with nonstick cooking spray. Bake at 300 degrees F for 30 minutes, stirring every 10 minutes. Cool. Store in an airtight container.

Again I think this recipe can be altered by using Splenda instead of reg sugar....

INGREDIENTS:
3 egg whites
2 tablespoons water
3 cups walnut halves
2 cups pecan halves
1 cup whole unblanched
almonds
2 cups sugar
2 tablespoons ground
cinnamon
2 teaspoons ground ginger
2 teaspoons grated orange
peel
1 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1/2 teaspoon ground cloves
DIRECTIONS:
1. In a mixing bowl, beat egg whites and water until frothy. Add nuts; stir gently to coat. Combine the remaining ingredients. Add to nut mixture and stir gently to coat. Spread into two greased 15-in. x 10-in. x 1-in. baking pans. Bake, uncovered, at 300 degrees F for 20-25 minutes or until lightly browned, stirring every 10 minutes. Cool. Store in an airtight container.

Here's one I got from a gal at my local support group:
Cinnamon "Fair" Roasted Almonds
3 cups of almonds or you favorite nuts
1 egg white
2/3 c. Splenda
4 tsp. cinnamon
Preheat oven to 400 degrees. Line a baking tray or cookie sheet with foil and spray with non-stick cooking spray. You can also use non-stick aluminum foil. Lightly beat the egg white in a bowl. Add almonds and toss until well coated. In a separate bowl, mix Splenda and cinnamon. Add Splenda/cinnamon mixture to almonds and coat well. Spread nuts on the baking tray and put in the oven for 10 minutes. Remove from oven and carefully separate nuts by hand as they may be clumped together. Delicious right out of the oven or put on wax paper to cool! Store in an airtight container.
