Spicky Lemon Salmon Cakes
7.1 oz pouch boneless, skinless salmon
5 saltine crackers
1/4 c Egg Beaters
1 T lemon juice
1/4 c chopped onion
1/2 tsp cayenne pepper (or to taste. 1/2 tsp makes them pretty spicy)
Combine all in a small bowl. Shape into 4 cakes.
Spray pan with nonstick cooking spray. Brown cakes 2-3 minutes on each side.
