Cheesy Tofu Bake!
Cheesy Tofu Bake
(up to 4 servings, depending on where you are in your food cycle)
1 square of soft tofu
1/1-1 oz. of pizza sauce (you can use no sugar added spaghetti sauce if you prefer)
2 oz. low fat ricotta cheese, part skim (you can also get fat free, my grocer was out of it)
¼ cup mozzarella cheese, shredded
1 teaspoon parmesan cheese
1 teaspoon Egg Beaters
Lightly spray pan with no stick spray
Slice ¼ inch thick across the tofu, it will be about 4x6 in size, lay in pan
Lightly brush across tofu square with egg
Spread pizza sauce across tofu (ok to make it thick if preferred, it will firm up slightly once baked)
Slice ricotta cheese 1/8 thickness across, cover tofu square with sliced ricotta
Spread 2nd layer of pizza sauce across tofu
Sprinkle top lightly with parmesan cheese
Bake 20 minutes at 400 degrees
After 15 minutes of baking, lightly cover tofu square with mozzarella cheese
Just made this tonight, it is yummy! Low in sugar, high in protein, and truly hit the spot
