low carb breakfast casserole recipe?

I make a crustless quiche (fritatta). I use 6 eggs, 1 cup milk (I use soy) and 8 oz of low fat cheese. Season with salt and pepper, onion powder, onion flakes, whatever you choose. This is your base. I haven't used veggies yet since I am a month out, but I do plan to use some green pepper and actual onion later on and diced tomato ( I would pan sear the pepper and onion first tho with some pam in a skilled so they aren't so crisp before adding it to the mixture). I also used diced ham and turkey sausage/bacon for meat. Spray a 9 inch round pan or 8 inch square pan with pam and pour in. Bake at 350 for 30 mins. Its deli****his has a lot of protien and carb free for the most part. Enjoy it! Hugs, Melissa

This is my favorite breakfast. I actually make it in muffin cups so I can take them with me on my way to work. Makes 18 muffins: 120 calories each, 10 grams of protein 4 eggs 1 box frozen chopped spinach, drained container sliced mushrooms (I sautee them with some onion and Pam first) 1 160z container lite ricotta cheese 1/4 cup parmesan cheese 2 cups lite shredded cheese Mix all ingredients and bake at 375 for 40 minutes or until golden. You can use egg beaters or ff cheese to lower the calories but I like the flavor of the real stuff. Sometimes, I add turkey bacon or sausage or other veggies. Have fun with it! Its a great low calorie, high protein breakfast
