Chicken Stirfry with Peanut Sauce
Okay again this is one you can do for 1-4 people easily.
I use about 1 chicken breast for every two people
Marinade diced cubes of chicken breast in Dales brand marinade for about 10 min. Do it while your chopping veggies, it doesnt take long. You can get Dales at Walmart, its in the BBQ and Marinade Section. If you cant find it use low salt soy.
I use what ever veggies I have or what sounded good.
Carrots, Celery, Snap Peas, Cabbage, Bok Choy, Broccoli
Heat a non stick pan with olive oil, just a drizzle, throw in the chicken first and stir until almost cooked then add the veggies continue to stir. If you like crisp veggies just continue to stir until chicken is cooked but if you like them softer like the texutre you get from a frozen stirfry package then add a little water and cover letting it simmer for about 7 minutes.
In another pan on the side boil some whole wheat spagetti noodles just a small amount, if you take them out of the box and hold them in your fist while hard it would be a bit bigger then a pencil but not as much as one of the thick crayons. KWIM well just a bit of pasta. Break it into 2-3 inch lenghts before cooking.
Before serving toss in the wheat pasta with the veggies and chicken, this is not a pasta dish there is just enough pasta to create some texture. You can omit the pasta completely if you dont want it.
Now House of Tsang Bancok Peanut Sauce (Walmart) I dont know any substitute, this is the best I have ever had. Drizzle it over the veggies before serving.
If your having company or have a family to feed you can serve with egg rolls. The peanut sauce is great on egg rolls to.
