Your best queso dip recipe

I need to bring a chip dip to a work potluck on Thurs. I usuallly do Rotel and velveeta but looking for something different, preferably with hamburger or sausage. And spicy is good. Thanks in advance!!! Lori

here is one I just made...with a little modification 1.5 pounds ground beef 1 pound hot italian sausage 1 cup chopped onion take italian sausage out of casing and brown with the ground beef and onion (I used half hot and half mild sausage. recommend trying jimmy dean sausage instead..easier to find) Put meat mixture into crockpot and add the following ingredients 1 can diced green chiles 1 package ready to serve spanish rice 1 can enchilada sauce 1 can refried beans 1 pound velveta cubed. ( I used 2 pounds and it was more than plenty thick and meaty!) the second batch I made I added a can of diced tomatoes and it was really good. This makes a really large batch so I wouldnt suggest doubling like I did. I had 2 large crockpots full but it sure did get ate up Kim
