Sweet Potato Casserole

Sweet Potato Casserole 6 large sweet potatoes, peeled and mashed 3 eggs 1 1/4 cup milk 1/2 stick of soften butter (I use Smart Control spread or similar) 1/4 cup bourbon (optional) 1 1/2 cup sugar (or 3/4 cups Splenda Baking) 1/2 tsp kosher salt 1 tsp cinnamon 1/2 tsp allspice 2 tsp pure vanilla extract 1 bag mini marshmallows Mix all ingredients with hand mixer until fluffy. Spoon mixture into a buttered casserole dish; bake at 350 degrees for 30 mins. Sprinkle on marshmallows and bake until melted and just begin to brown. Serves about 6-8 people. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ 1 large can yams or sweet potatoes, drained and rinsed - or you can peel, cube and boil two large yams, until tender 1/2 cup Butter, melted 2 tsp. Cinnamon 1/2 cup NatureSweet brown sugar 1/2 cup Dole unsweetened Pineapple Juice 1 cup Pecan, chopped 1 cup of sugar-free marshmallows (or you can use regular marshmallows and be careful to not take any of it when dishing since they are hard to find, unless you order them online) Place yams in a lightly buttered casserole dish. Sprinkle pecans over yams, evenly. In a bowl mix together butter, cinnamon, brown sugar and pineapple juice. Pour over yams. Cover with foil and bake at 350 degrees F. for 30 minutes. Remove foil and spread marshmallows over top. Bake an additional 5 to 10 minutes, until marshmallows have melted, watching closely so they don't burn. Serve hot. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Several large Yam (I use about 5) 1 pkg. chopped pecans 1 cup raisins 1 cube of butter 1 small can of manderine oranges (canned in juice instead of syrup or get the light syrup kind) 1 cup Sugar Free Maple syrup Boil the yams until you can peel the outside skin off. You don't want them mushy but still firm. Peel and cube yams and place in large casserole dish. Sprinkle the raisins and pecans over yams. Drain the oranges but save about half the juice. Take the oranges and break them up in your hands over the yams. Add the reserved juice. Mix all this together. Take the butter and break it in small pieces over the yams and pour the syrup over everything else. Bake for about 30 min at 350. They are really good and very low in sugar.
