Crockpot Dressing
For those of you who love a good moist Cornbread dressing, this is a quick and easy way to get 'er done!
Add to large 6 qt oval crockpot:
1 pan of cornbread (can be made ahead), crumbled
6 slices of white bread, torn up
3 hard boiled eggs, diced
3 raw eggs
1 large onion, chopped
1 bunch of celery, chopped
Heat 1 stick of margarine, 1 can of chicken broth and 1 can cream of chicken soup and pour into the crockpot.
Add poultry seasoning or sage and salt and pepper to taste.
Cook on high for about 4 or 5 hours or low for 6 to 8 hours.
Stir often, and add more broth if it dries out too much.
I take this to our Thanksgiving or Christmas pot luck at work... Just mix it all up the night before and refrigerate. Take it to work and plug it in the next morning... By the time lunch rolls around the whole office is smelling wonderful!
