I know there is some out there, and for some reason, I am craving pumpkin, which is funny, cause before surgery, I hated pumpkin..lol

I've never cared for sweetened pumpkin, as in pie, etc., but I like it cooked like squash with butter and salt and pepper. Another good way to cook it is to make a stew (cooked), then put it in a pumpkin (seeds and strings removed) in the oven and cook it until the pumpkin turns soft. Scoop out some of the cooked pumpkin when you scoop out some stew and eat it together. Delicious!!!

have you ever tried pumpkin mousse? Its a weigh****chers recipe and only 1 point (if you follow ww). its very good ingredients are sf vanilla pudding mix, skim milk, pumpkin, spices and sf coolwhip. I'll try and remember to post tonight, its delish!

SF Crustless Pumpkin Pie 15oz can pumpkin 1/2c egg beaters 1 and 1/4c skim milk 3/4c splenda 1/2tsp salt 1tsp pumpkin pie spice Beat all ingredients together. In a sprayed pie plate, Bake @ 400 for 15 min, then @ 375 for 45 min. 335 cals for the entire pie and lots of fiber! I made this yesterday and it was awesome, not to sweet, but just right. Enjoy!
