You can use green beans instead. I made a tuna casserole with green beans and it was really good.

A couple of idea... 1-Have you checked out Dreamfields Pasta? They advertize as being low carb. I've not checked into it, but it might be an option for you. I think I remember them offering an online coupon for your first purchase. 2- I've substituted zucchini strips about 1/8 inch thick, cut lengthwise to replace lasagna noodles and it worked out really well. In fact I had people eat it that weren't on low carb that didn't know the difference until I told them. So, maybe you could cut the zucchini strips into narrower strips lengthwise for your tuna cassarole?

You can get pasta made with soy at health food stores. It's high protein and low carb. I ,personally, don't like the texture--kind of like eating rubber bands, but a lot of people think it's delicious. The flavor is good, just the texture I can't get past. I've had gastric banding, and regular pasta, rice, bread, or potatoes gob up in my stoma, as well as being too high in carbs. I've found I can easily do without all the others, but really crave the pasta.

I have heard some use califlower instead of potatoes. I even have a recipe for smashed cali. You can add sour cream and cheese to it for more protien. Enjoy Marylin
