Chicken Casserole

1 can Tyson All White Meat Chicken 1 can Mild Ro-tel, drain reserving liquid 1 can 98% Fat Free Cream of Chicken Soup 1/2 cup low fat shredded cheddar cheese Baked Dotritos (enough to cover bottom of baking dish) Spray 9" square baking dish with Pam, ruff crush doritos, placing into bottom of dish (reserve about 1/4 crumbs for top), drain chicken and place on top of doritos, mix chicken soup and ro-tel and 1/2 of liquid from tomatoes. Pour over chicken, top with cheese and remaining crushed doritos. Cover with aluminum foil and bake on 350 for 30 minutes. Remove foil and bake 10 additional minutes or until hot and bubbly .(about 40 - 45 minutes total). This recipe does not call for salt.

Mary, Ro-Tel is a brand of canned tomatoes. They can be found either spicy or mild. Laural

I know you posted this a while back but how soon after surgery did you try this one. My hubby is 5 months out so I am wondering if he would do ok with the doritos part of this. Sounds like he would love it htough. Also any idea on the nut values? I am only not even a week out so I will have to wait a long while before I try it but I am hoping for my hubby. Thanks so much.

Phyllis, Since I can still do limited at night becuase I am so tired by the end of the day this was a true blessing at dinner last night. I did not have any rotel so I used salsa with a little more hot sauce to make up for the spice and my hubby loved it. Thanks so much. I was able to eat a tiny bit of the chicken. I am allowed to eat soft chicken now so I thought I would try. THe yummy cheese and salsa with the soup around it made it very moist and very tasty. Thanks again, Melissa
