Protein bread and another pb cookie
It is over a hundred degrees today and I still decided to make these. Not real bright of me but I wanted something with decent food value for a snack. You will want a cup of tea or coffee or a glass of milk to up the protein and "wet" both recipes. The bread and the cookies are very good but a bit on the "dry" side. I am sure you could add a ripe banana to the bread if you want a banana bread.
BREAD OR MUFFINS
1/2 c melted butter
2 large eggs
1/3 cup + 2Tblsp 2%milk
1/2 tsp. vanilla
MIX THOROUGHLY
1 cup unflavored Whey Protein Powder
1 tsp baking soda
1/2 tsp salt (optional)
Bake 325 for 25 - 30 minutes - in loaf pan
Bake 325 for 10 minutes in muffin papers, only fill 1/2 full.
Contains more than 140g of protein and less than 24 grams of carbs per recipe.
**Another peanut butter cookie**
2C. Peanut Butter (used regular creamy Skippy)
¼ C. sugar free syrup
1 C. Splenda
1 C. vanilla soy protein
2 tsp Vanilla
2 eggs
Mix all ingredients together, then roll into balls and press w/ fork.
Bake at 350 for 10 min.
Made 48 cookies. Each cookie contains: 76 calories, 5g protein, less than 1g sugar (from pb) , 2 g carbs

I used sf pancake syrup because there was brown sugar in the old original recipe.
But I really think a Davinci in just about any flavor would also work. Hmmm white chocolate, raspberry, orange or maybe Kalua or English toffee. It would sure make this into a desert bread.
