Mediterranean Chicken in Slow Cooker - YUMMY
This recipe comes from a bariatric cookbook that my hospital has developed.
Mediterranean Chicken in Slow Cooker
Vegetable oil spray
1 1/2 lb of boneless, skinless chicken thighs or 2 lbs of chicken thighs, skinned and fat removed
1 14.5 oz can crushed or diced tomatoes, undrained
3 T of vinegar or lemon juice
3 T of soy sauce (I use low sodium)
1 tsp of dried oregano
1 tsp of minced garlic or 2 med cloves minced (you can use garlic powder)
1/4 tsp of crushed red pepper flakes
Spray slow cooker with oil spray. Rince chicken and pat dry with paper towels. Put in slow cooker and add remaining ingredients. Cook on low for 8-9 hours.
Calories: 178, Fat 8g, Protein 20g, Carbs 4g
Serving size: 2/3 cup
Yes, I did try it today and it is REALLY GOOD! I agree with more italian than mediterranean.... but it wasn't over powering in my opinion. My husband is trying it with rice when he gets home from work tonight. Rice doesn't set well on my pouch.
I liked the fact it was soo easy to make! I'll post more recipes after I try them. I don't want to post anything that isn't good! haha!

OK.... you got me too. I'm pre-op, but this sounds wonderful, we're supposed to have low 70's as our high temps this weekend.
I have a small, very lean pork loin roast on hand, so I think I'll cut it up to use it. (I have chicken in the freezer for after surgery broth and I don't want to go shopping).
Love slow cooker recipes... into the pot and walk away.
