Bean Sprouts (Mung) 1 c. raw = 3.16g protein (others may vary). http://www.nal.usda.gov/fnic/foodcomp/search/ is the gov't site for nutritive value of foods. It takes a little getting used to their search engine, but there is a phenomenal amount of information there. (For this one I just entered "sprout" and when the list came up, I scrolled down to Mung, raw, then selected the amount as 1 cup.) VIOLA! Up pops a screen with all the nutritional values I could possibly consider. As for recipes my fav is www.recipezaar.com you'll find plenty using all kinds of beans and sprouts. Shirley

The protein count doesn't seem that high, but they are a good fill-you-up veggie. Egg Fo Yung usually uses alot of bean sprouts and you'd get GOOD protein from the eggs in it.

I don't know any "recipes" using bean sprouts but I do like them!! I like to add them to salads or even on a sandwich. A pita pocket with tunae and sprouts sounds yummy to me!
