I've found that if I cut the chicken into small pieces it turns out not so dry. I actually buy chicken strips and freeze them in individually. I also slice it when it is semi frozen, much easier. then I fork the chicken, spice it up with whatever flavor i'm in the mood for, usually garlic salt with parsley by lawrys....but what i do it put the pieces back into the zip lock bag and sprinkle the season into the bag then mash the season and chicken together and let it marinate for a while in the frig. I cook it in a pan with a little pam. after it's cooked sometimes i will add a little alfredo sauce or teriyaki (just a dot on each piece). Very yummy!! Hugs, nora
Poking it with a fork & marinade are two of the best ideas... often after marinading it, I'll just dump the whole thing, chicken, marinade & all into a big fry pan or into a casserole dish & bake.
Baking is often a good way to do it. Yes, the forman grill works great, you can by the pre-trimmed 99% fat free chicken breast or just cut it up yourself so there's no fat (ewe chicken fat is so nasty) and bake them with everything from a few drops of water, canned soups, marinades, etc. etc. & it tends to "seal" in the moisture. I hate dry chicken too- especially since I can't drink when I'm eating!
