Chicken Jambalaya ( CROCKPOT)
CHICKEN JAMBALAYA
1 lb uncooked bone/skinless chicken breasts, cubed
3 cups fat free chicken broth
1 1/2 cups uncooked brown rice
4 oz reduced fat. smoked turkey sasuage, diced
1/2 cup celery with leaves , thinly sliced
1/2 cup chopped onion
1/2 cup green pepper, chopped
2 tsp cajun seasonings
2 garlic cloves , minced
1/3 tsp hot pepper sauce (optional)
1 bay leaf
14 1/2 oz can no salt diced tomatoes, undrained
In large skillet, saute chicken for 2-3 minutes
Stir remaining ingredients in slowcooker
Add sauteed chicken
Cover and cook on high for 6 hrs
