Grilled Caribbean Chicken Breasts 1/4 cup fresh squeezed orange juice 1 teaspoon orange peel 1 tablespoon olive oil 1 tablespoon lime juice 1 teaspoon minced ginger 2 garlic cloves, minced 1/4 teaspoon hot pepper sauce 1/2 teaspoon minced fresh oregano 1 1/2 pounds boneless, skinless chicken breasts, halved In a blender, combine all ingredients except the chicken. Pour the marinade over the chicken breasts and marinate in the refrigerator at least 2 hours or up to 48 hours. Grill or broil the chicken for about 6 minutes per side until no trace of pink remains. 6 servings, 3 to 4 ounces each.
