Middle Eastern Tuna Salad 2 7 ounce cans water packed tuna, drained 1 large cucumber, peeled and diced 1 small red onion, diced 3 medium tomatoes, seeded and diced 1/2 cup cooked canned chickpeas 1 tablespoon olive oil 2 tablespoons fresh lemon juice 1/2 teaspoon ground cumin 1/4 teaspoon ground red pepper 2 teaspoons toasted sesame seeds In a large salad bowl, combine all ingredients. Cover and chill for 1/2 hour. 4 servings.
