Here's one that's great for post op, plus my seriously picky 6 year old loves it too!
(I actually make this to bake in a 425 degree oven for roughly 25 minutes with chicken tenderloins)
Jamaican Chicken
2 teaspoons garlic powder
1 teaspoon onion powder
1/2 teaspoon ground ginger
1/2 teaspoon dried thyme
1/2 teaspoon ground allspice
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper
1/8 teaspoon fresh ground black pepper
8 boneless skinless chicken thighs (TENDERLOINS work GREAT!!)
Mix together the first 9 ingredients in a small bowl.
Rub spice mixture evenly over chicken.
Heat a large nonstick skillet over med-high heat. (if you use frozen tenderloins, bake at 425 for roughly 25 min.)
Coat pan with cooking spray.
Add chicken to skillet; cook 5 minutes on each side or until done.
