cream of oatmeal....spruce it up by adding a spoon of peanut butter, cinnamon, splenda, and skim milk....or can add applesauce, or strawberries, bananas, kiwi is good too... Sugar free pancakes 3/4 c. quick cooking oatmeal 1 c. skim milk 3/4 c. oat flour 2 T. splenda 2 tsp. baking powder 1/2 tsp salt 2 beaten egg yolks 1 T. oil...i use applesauce...my sister canned some using just apples, and no added sugar 2 egg whites * opt...few dashes of cinnamon* Heat milk in microwave till hot...add oatmeal and stir...set aside 5 minutes...Toss in dry ingredients...add egg yolks, applesauce....stir....Beat egg whites with additional splash or two of salt , till forms stiff peaks....fold mixture into batter....spray non stick skillet with no fat * i cant believe its not butter spray*.... Top with....I top mine with peanut butter and sugar free smuckers syrup...has a lil sugar alcohol in it, but you have to use alot to get the amount listed... I make mine into small patties, and let cool, then freeze in freezer bags for later...reheats in about 40 seconds in the microwave....can top them with fresh fruit, or sugar free preserves... **************************************************************************************** peanut butter, oatmeal cookies 1 c. peanut butter...can by sugar free, but i dont 1 c. splenda 1 egg few dashes of cinnamon 1/2 cup oatmeal Mix, roll into small ball size...roll into additional splenda....place on baking sheet...press down lightly with fork...bake at 325 for approx 5-6 minutes...just until lightly brown on the bottom...dont overbake.... * if mixture seems dry, add few drops of skim milk* * Opt...dash of salt *************************************************************************** Tuna patties 1 can drained water packed tuna 1 egg dash of salt pepper dash of onion powder dash of celery salt oatmeal to thicken...just eyeball it till it forms patty Make patties and pan fry in non stick skillet, sprayed lightly with no fat butter spray or veg spray....can top with cream of chicken , cream of mushroom, low fat motz cheese ******************************************************************************** Tuna salad 2 cans of water packed tuna...drained 2 boiled eggs 1/2 c. diced fine celery 1 apple, peeled, and diced fine handful of raisins ...opt toss in some lite mayo to suit yourself few squirts of mustard few squirts of ranch dressing...opt...i now use south beach ranch, very healthy Mix all together...best to allow to chill a few hours....can be served plain, or I put mine on triscuit crackers.... ********************************************************************************** Corn meal muffins...I make these in the lil muffin pan ...they are small enough for my portion size...I cut them open , and spray no fat butter spray and sugar free preserves on them...Or you can use them to make sandwiches instead of bread....Slap on some turkey, chicken, ham, roast beef slices...or add some low fat cheese with choice of meat, along with lettuce, perhaps a slice of cucumber for crunch, and dab or lite mayo, mustard....low sugar ranch dressing is good choice too....can also use muffins to put your tuna salad on, or chicken/ turkey salad...or spread lite cream cheese mixed with a dab of splenda, topped with fresh fruit like strawberries or kiwi....can also slice muffin open...add pizza sauce, slice of ham, dab of onion, cheese...heat until cheese melts.... also can make corn bread dressing using baked muffins, torn up, with some chicken broth, few pieces of chicken ( opt )....add some onions, green peppers, sage, egg, salt , pepper....toss in dish and bake until done....add or leave out what you dont like... Also can tear up muffins, add can of cream corn, some splenda, salt, pepper, one egg...makes a good baked corn 3/4 cup oat flour 1 1/4 cup corn meal 1/4 cup splenda 2 tsp baking powder 1/2 tsp salt 1 c. skim milk 1/4 c. applesauce 1 egg or 2 egg whites mix and lightly spray muffin pan...bake at 325-350....can pour batter into a pan and bake all at once, and cut squares instead of using muffin pan....is easier, especially if you are going to tear it up to use for casseroles and etc... *********************************************************************************** zuchinni cupcakes 1 c. splenda 1/2 c. applesauce 1 egg 2 tsp vanilla 1/2 tsp salt 1/2 tsp baking soda 1/2 tsp baking powder 3 - 4 tsp cinnamon...i sometimes add extra 1/2 c. shredded zuchinni Mix all together in a bowl....spoon into lightly sprayed cupcake pan....mine is non stick, or use cupcake wrappers...1/2 full...bake 325-350 till done....Take from oven...allow to cool slightly....spray tops with no fat butter spray...dunk upside down in bowl with additional splenda and cinnamon mixed.... ***************************************************************************** Taco Dip 2 pks lite cream cheese 16 oz low fat sour cream 3/4 pk taco seasoning mix cream together and spread into serving dish....top with your choice of...lettuce, low fat cheese, green peppers, onions, mushrooms, olives, tomatoes Most serve with white tortilla chips, but they arent very healthy...i put mine on triscuit crackers..is also good plain ****************************************************************************** Triscuits.... try making a sandwich on them....slice of cheese, favorite meat such as turkey, chicken, tuna salad, roast beef....add cucumber, slice tomato , onion....just be creative....can spread pizza sauce on them, add some cheese, hamburger meat, melt in microwave....a triscuit makes a good ham and cheese sandwich heated.... ************************************************************************************** Pineapple pecan cheese ball 2 ( 8 oz ) pks lite cream cheese 1 cup chopped pecans or walnuts 2 T. chopped fine onion 1 c. drained crushed pineapple 1/4 c. chopped fine green pepper 1 tsp salt 1 pk diced beef slices Mix above ingredients in a bowl, expect for the beef....form into a ball and roll in the diced beef....chill for a few hours....over night is better....serve on triscuit crackers....can cut recipe in half cuz it makes a big cheese ball...unless you are making it for a party or something ************************************************************************************ Pineapple pretzel dessert 1 cup crushed pretzels...i use oatmeal because am not allowed pretzels...not as good, but it works.... add one stick melted lite butter....i recommend the no fat butter spray.... 1/2 cup splenda....Mix oatmeal, butter and splenda ....Press in 9x12 pan, bake at 350 for 5 minutes, until just lightly brown, crunchy....cool and add the following... Mix 12 oz sugar free cool whip,1 - 2 blocks of lite cream cheese ( depending on your taste buds), and 1/4 c splenda...Spread over crust....chill while doing next step... Squeeze out the juice from a 20 oz can of crushed pineapple, trying to get close to 1 cup ....add 1/2 cup of splenda to the juice...stir 2 T of cornstarch with just enough cold water to dissolve...heat pineapple juice to a boil, stirring constantly...add cornstarch, stir until thickened....cool and then add the crushed pineapple....Spread on top for last layer....Chill for a few hours....cut into squares and serve Can be served on lettuce leaves.... Can garnish with choice of fresh fruits...opt... Ive also used mandaran oranges in place of the pineapple... ********************************************************************************** Yellow squash tuna casserole In mixing bowl.... 1 can water packed tuna...do not drain water off 1 can mushrooms....do not drain 1 can cream of chicken soup....or mushroom soup few dashes of onion powder....can use fresh chopped onion few dashes of celery salt, or freshly chopped celery 3/4 c. low fat cheese...i use mix between colby and motz... small yellow squash...peeled, and chopped in small pieces...seeds are usually so little , so usually dont have to worry about those...they cook away...if too big to suit you, then take them out... Mix the above and place in sprayed baking dish... Top with approx 8-10 triscuits crushed lightly just to leave small chunks add some no fat butter spray until crackers are moistened...add 3/4 cup more of cheese...Mix and spread over casserole...bake at 350 for 1 hour... can use instead of tuna....chicken, turkey, lean browned hamburger, cubed ham, lite turkey sausage.....can also add can of water chestnuts and frozen peas to the casserole which is really good....as well as baby carrots.....1/2 cup of lite , low fat sour cream also puts a nice flavor to it... Do not add milk or water to the cream soup... ************************************************************************************ spaghetti squash casserole Take knife and poke about 6 holes in the top of a spaghetti squash...sit on baking pan in oven for about 1 hour and 15 minutes on 325-350....some say they use the microwave, but i would be afraid it might blow up....when done allow to cool until you can handle it...cut open, not long ways...scoop out innards...take fork and in a circular motion, pull out the spaghetti like strands...place in bowl, and mix in some spaghetti sauce....Toss into baking pan...add layers of your choice such as....Low fat cottage cheese, lean browned hamburger, chicken, turkey, diced onions or powder, garlic, green peppers, mushrooms, parmesan cheese, low fat motz cheese, extra sauce if you like alot...Bake at 350 for about 1 - 1/2 hours...if casserole seems watery, its from the squash...Mine did, and I just tilted the dish over GENTLY LIKE and poured off the water....then i baked it a lil longer.... ************************************************************************************** Can also use the spaghetti squash, or the cubed yellow squash for pretend baked mac and cheese...add some no fat butter spray, some low fat colby/ motz mixed...or your choice of cheese, dash salt and pepper...lil skim milk...bake and enjoy.....You can also add brocoli , cauliflower, water chestnuts, snow peas, baby carrots to this same dish.... Instead of beef and noodles, or chicken and noodles....Take beef or chicken with their broth, and add some spaghetti squash...can add diced onions, celery, and baby carrots for a soup.... *********************************************************************************************** Cooking with foil....very nutritional, fast, easy and not messy, very lil clean up Lay sheet of foil on a baking sheet....spray lightly add any of the following, wrap up and bake at 350 - 400....until done suggestions.....chicken of your choice...boneless, skinless, light or dark....turkey , ham, lean hamburger patty, turkey sausage link, lean and think pork chop...meatloaf.... add to choice of meat, or can fix without meat....baby carrots, celery, water chestnuts, squash or zuchinni chunks, brocolli, cauliflower, garbonzo beans, pea pods, onions, garlic, salt and pepper, tators if you are allowed....can toss in garden green beans, limas, and etc....green peppers, mushrooms, tomatoes....fold foil up to package size, and bake....I sometimes top mine with soy sauce or terryaki....sometimes dab of low fat cheese with pizza sauce on the meat... ************************************************************************************* Meat loaf.... lean hamburger....add one egg, some ketchup, mustard, celery salt, garlic and onion powder, or the real deal....some oatmeal to thicken...Lipton onion soup mix is good too....few drops of soy sauce....or A 1 sauce.....mix and place in foil....Take 1/2 cup ketchup, few squirts of mustard, 1/4 cup of splenda or lil less....mix and spread over meatloaf....can add some tators, of your choice of veggies....fold up foil and bake.....Sometimes if i am in a hurry, I will make the meatloaf, and form into patties, and pan fry in non stick skillet....spray lightly if they try to stick...cuz of the lean meat.... ******************************************************************************************************* In foil...place slice of ham...add cabbage wedge, onions, green peppers, garlic, salt, pepper, no fat butter spray, squash chunks, baby carrots, mushrooms....your choice....wrap and bake... ********************************************************************************** Can use cod fish, or haddock, or your choice...even shrimp....spray with no fat butter, add some lemon juice, garlic, onion, salt , pepper, ....bake in foil *************************************************************************************** Crock pot ideas.... Place ham, water, and choice of beans....or use several types such as black beans, pinto, kidney, lima, wax beans, fresh green beans.....cook for 6-8 hours.... or place chicken or beef in crock pot....add choice of veggies such as green beans, waxed yellow beans, garbonzos, baby carrots, celery, water chestnuts, peas....tomatoes, chicken or beef broth....can add brocoli, cauliflower or cabbage....mix them all together, whatever you can tolerate or have on hand ************************************************************************************** Take lean cut, thin porkchops. or chicken or turkey...dunk in egg wash, and roll into oat flour or crushed corn flakes....lightly pan fry using no fat butter spray....place in crock pot, with some chicken broth to cover....coo****il almost tender....can add veggies of your choice....can thicken broth with cornstarch, or pour off broth and add chicken or pork gravy from a jar....if allowed rice, toss in some rice....or noodles....I cant have either one, so I use veggies.... Ive done the same with round steak , and used the beef gravy....in the crock pot...add a few baby carrots, celery, tators if allowed., peas....you can put mushrooms in also, or use the golden mushroom soup from campbells instead of the gravy... ******************************************************************************* Crock pot, or use kettle....Taco Soup 2 lbs lean hamburger, browned.... can use chicken or turkey 1 med chopped onion 1 can kidney beans 1 can pinto beans 1 can black beans 1 can diced tomatoes or stewed tomatoes 1 can drained corn 1 pk taco seasoning mix 1 pk hidden valley ranch mix 1 can garbonzo beans place in crock pot and cook 6 hours or until you wish to eat.... is also good to add....one can tomato soup, and green peppers.... One in bowl to eat...can top with low fat motz cheese, and lite sour cream...OPT **************************************************************************************** Pretend baked macaroni and cheese Yellow squash, peel, cut in strips, not too thin...place in sprayed baking dish...add salt, pepper, no fat I cant believe its not butter spray, low fat cheese ( I used colby, motz mixed)...mix and cover with skim milk...bake at 350 until nice and brown... Optional...I cubed up a skinless, boneless chicken breast tenderloin and mixed in with mine for extra protein...could use other meats such as browned lean hamburger, cubed ham, turkey....also can add water chestnuts, baby peas, carrots, brocolli, spinach, whatever veggie that sounds good...
