Grilled Tuna Tostadas

I found this recipe while I was clipping some coupons this morning and thought it sounded good. I also thought I would share it with all of you. Here it is: Grilled Tuna Tostadas 1 7 oz Starkist Flavor Fresh Pouch chunk light Albacore Tuna 1 can (15 ¼ oz) Whole kernel Sweet Corn drained 1 cup diced red bell peppers ¼ cup sliced green onions 2 tsp. Chili powder ½ tsp. ground cumin 1 tsp. Hot sauce 6 low salt corn tortillas 6 tbsp. Shredded low fat low sodium cheddar cheese 1. Combine tuna, corn, red pepper, onion, chili powder, cumin and hot sauce in microwavable bowl. Cook on high 2 minutes. 2. Spray tortillas with nonstick cooking spray. Divide corn-tuna mixture among tortillas 3. Carefully place over well oiled grill or nonstick grill pan. Sprinkle with cheese. Grill over medium heat about 5 to 7 minutes or until cheese is melted. Garnish with lime juice, cilantro, shredded lettuce and additional hot sauce, if desired. In my opinion, some of the items can be substituted with other things, but it sounds like a good recipe. I plan on making it today for my lunch tomorrow because I would eat it more like a salad with a few rye crackers. I hope you enjoy it. It serves 6. Moni
