My date is set, and all I can think about is the surgery and my life as a post op. I realize that solid food is about 3wks + into my future after surgery, but I'd like to start collecting recipes so when it's time, I have some band friendly recipes to start off with.
Would you mind sharing a one, two, or a couple?
Thanks :)

Makes one serving... (you will have to increase the ingredients for every 4oz chicken)
4oz Chicken breast w/o skin (boneless)
1 tsp canola oil
2 tsp taco seasoning
1/4 cup canned black beans (I used pinto)
1/4 cup sweet yellow corn

heat oil in skillet over med-high heat
cook chicken strips for 8-10 mins in skillet, stirring occasionally, or until chicken is no longer pink

Smoked porkchop w/ pineapple
cooking spray
1 lb lean precooked smoked boneless pork chops or ham steaks
1/2 cup onion chopped
1 tablespoon balsamic vinegar
2 teaspoons concentrated chicken broth
1/2 cup water
1 teaspoon of brown sugar artificial sweetener (I guess you could use the real stuff)
1/2 cup fresh pineapple, diced
1/2 teaspoon chili powder
heat up cooking spray until hot, saute the pork for two mins on each side (remove and keep warm)
add onion to the pan and saute for 2 mins ****il soft)
add the balsamic vinegar, chicken broth, water, and brown sugar, stir and scrape up any brown bits. Stir in pineapple and chili powder, lower heat simmer 3 mins.
Pour the sauce over the ham and serve
NOTE:
it does not make a whole lot of sauce, next time I am gonna double up on the sauce stuff to make more...
Enjoy!
I believe the nut values are for 2 oz servings:
Calories 165 Protein 23 Fat 5g Carbs 6g Cholesterol 51mg Fiber .7g Sodium 1651mg
you need the sauce to blend up the ham... it worked well all mushy and regular. I think I'm making this tonight :D
