Chicken Enchiladas
2 cups cooked chicken, chopped
1 cup green bell pepper , chopped
8 oz low fat cream cheese, cubed
1-1 1/2 preotein (any whey) mixed with cream cheese
1 cup salsa ( low sugar or sugar free)
6 flour tortillas ( low carb)
1 1/2 cups fat free shredded sharp cheddar cheese
1/4 cup fat free milk

1. In mixing bowl , combine preotein with cream cheese
2. Stir chicken, bell pepper, cream cheese and 1/2 cup salsa in saucepan on low heat until cheese melted
3. spoon 1/3 cup chicken mixture down center of each tortilla, roll up. Place , seam side down, in lightly greased 12x8 inch baking dish.
4. Stir cheddar cheese and milk in saucepan on low heat until smooth. Pour sauce over tortillas, cover with foil.
5. Bake at 350 for 20 minutes or until thoroughly heated. Pour remaining salsa over tortillas.

Power Butter Balls
1 cup Power Butter or peanut butter
1 egg
1 cup Splenda
Mix together and form balls or press to form cookies.
Bake at 350 for about 12 minutes.
