Birth trumps memorial.
Does the memorial have to take place on the 6th? If so, DH can go to a Greek Orthodox Church for mass in your town. He can certainly honour his father privately given the situation.
Besides, as someone else has posted, there is no greater way to honour your FIL's memory than to bring a new grandbaby into the world.
