Hello Everyone...
I am sitting wondering what to have for our Christmas meal. What are you all having? I have no idea as of now but really need to figure it out soon.

Oh, and while I am asking about food - what kind of holiday goodies to you make?

Hope you all have a great Monday.

Hugs,
Erika

my favorite topic! lol

WE always have prime rib (or standing rib roast - which ever you prefer to call it) mashed taters, corn, home made rolls, and usually another veggie. Dessert is always different.

Oh holiday goodies: peanut butter balls, truffles, cookies, cakes, pies - you name it!

Ok now I am hungry.... lol

We always have a turkey with all the trimmings on Christmas Day.  Christmas Eve, we have ham, hot sausage, potato salad, wedding soup, and a whole buffet of appetizers.  After all of that cooking, we usually end up having leftovers until New Years Eve when we have pork and sauerkraut.

Since I'm on semi-bedrest this year, I'm not going to be able to do much baking.  Hubby is making pumpin rolls and chocolate rolls with splenda.  I made some  nut cups yesterday and I'm trying to find someone to make me some peanut butter fudge.  I also bought a tub of chocolate chip cookie dough and a tug of sugar cookie dough.  I'll let Alex help me spoon those onto the pan one night next week since he loves to help make cakes and cookies.

I usually help my mom make caramel cups, lady locks, nut rolls, and a host of other goodies but just can't muster up the energy.

We're Italian so we always have-

homemade sauce and baked ziti with meatballs, sausage and pork chops.  We have like 10 breads, including our "pizza bread" which is just pizza dough with olive oil, salt and lots of pepper, baked and left sitting over night to harden it.  Also antipasto and a ton of appetizers lol.

O yea and cookies and cheesecake!

on Xmas eve we always have fried flounder--yummmm.  And seafood scampi!

Christmas is my fav!

Well, my mother in law is cooking for Christmas Eve and makes her homemade lasagna, salad, and garlic bread for dinner.   She always does meatballs, coctail weinies, shrimp, chips and dip, cheese and crackers, etc...for appetizers.

Christmas day we are cooking at our house this year

Turkey, ham, stuffing, mashed tatoes and gravy, green bean casserole, sweet potatoes, dinner rolls, deviled eggs, and relish tray is so far what I've decided on.

So far for goodies I've made, fudge, peanut brittle, gingerbread men, snickerdoodles, coconut candies, cinnamon apple butter spritz, reg spritz, thumbprint cookies, and went to a cookie take and bake at church yesterday.   Might still do sugar cookie cutouts too if I get the time.  My sister in law is bringing chocolate peanut butter pie.

We don't do Christmas Dinners, we do Christmas Breakfast/Brunch, more brunch because of the time, but it's all breakfast foods, LOL

We do scrambled eggs with cream cheese, bacon, sausage, waffles with strawberries or raspberries and cool whip or maple syrup,  toast or english muffins or croissants, hashbrowns, OJ, sparkling cider,  egg nog, or milk.

This will be my first year with a new tummy so I know I will only be able to have a little bit but at least we'll have LOTS of proteins to choose from.

After Breakfast we usually have snack foods for the rest of the day, like chips, veggies, fruit, Christmas cookies, and we have some deli meats and rolls to make mini sandwhiches whenever.

Nice and fairly relaxing for a large family of 9.
