Crockpot Rotisserie Chicken
1 Whole Chicken
Olive Oil Cooking Spray
Lawry's Seasoned Salt (or make your own rub*)
I used Lawry's and Cavendar's Greek Seasoning.
Aluminum foil

Clean chicken inside and out. Spray with olive oil spray.

Sprinkle inside and out with Lawry's.

Spray inside of crock with cooking spray. Note: Do not put any water in the crockpot.

Roll some wads of aluminum foil into balls and put them in the bottom of the crock. The chicken is going to sit on these.

Put chicken back side down in crock on top of aluminum balls.

Cook on High (will not come out the same on low), 4-6 hours.

*Chicken Rub:
2 tsp. paprika
1 tsp. cayenne pepper
1 tsp. onion powder
1 tsp. thyme
1 tsp. white pepper
1/2 tsp. garlic powder
1/2 tsp. black pepper

Chicken Stroganoff
Chicken Breasts (1 lb or more )
Lipton Onion Soup Mix (1 pkg)
Cream of Chicken Soup (Fat Free 1 can)
Cream of Mushroom Soup (Fat free 1 can)
1 jar drained mushrooms
16oz Fat Free Sour Cream
Put in crock pot and cook for 6 hours on low until done
(I cook a bag of egg noodles and serve it over that for the hubby or the rest of those eating over)

(Like) Lasagna

1 box of pasta (rotini, ziti, something like that that looks like fun)
2 big jars pasta sauce (28 oz. each)
1 medium can diced tomatoes
3 eggs
1/2 pound ground beef
1/2 pound sausage
2 tablespoons olive oil
2 cups Parmesan cheese
2 cups mozzarella cheese
2 cups ricotta cheese
1 1/2 tablespoons parsley flakes

Cook the pasta according to directions (about five minutes). Cook the meats together and drain. Mix the pasta and olive oil and put the pasta on the bottom of the crock pot. Mix the meat, one cup of each of the cheeses, and one of the eggs and put that on top of the pasta. Mix the remaining ingredients and put that on the very top. Cover the crock pot, turn it on low, and come home to some faux lasagna.

DIfferent ones below! Put everything in the crock pot. Turn it on low. Walk away for at least eight hours:

Crock Pot Chili
1 large can tomato sauce
1 pound lean ground beef
2 cans beans (kidney beans are fine, but you can use whatever you like)
2 tablespoons chili powder
1/4 cup diced onion (or onion salt)

Simple Pot Roast
1 2 to 2.5 lb. roast
2 cups chopped carrots
2 cups chopped potatoes
1 cup chopped celery
3 cups beef broth or beef stock

Ham and Potato Casserole
4 red potatoes, sliced
2 red onions, finely chopped
1 1/2 pounds cubed ham
1 can condensed cream of celery soup, diluted according to can directions
2 tablespoons flour

(This one is very good with cheese on top just before you serve it.)

Shredded Beef Sandwiches
2 pounds beef brisket
1 tablespoon olive oil
2 1/2 cups beef broth or beef stock
2 cloves minced garlic
1 chopped red onion

(Serve this on buns - magnificent!)

Breakfast Apple Cobbler
4 medium-sized apples, peeled and sliced (try Honey Crisps)
1/4 cup honey
1 teaspoon cinnamon
2 tablespoons melted butter
2 cups granola cereal

(Start this one at 10 or 11 PM - ready for breakfast!)

The best crock pot meals don't have recipes.  They are a little of this and a little of that.   Just experiment and you will come up with great stuff.

That's what I do.   LOL

lol so true - that's why mine don't have measurements! Actually most of what I cook I couldn't tell you the measurements :)

The little of this and little of that recipes are usually the best.  I made spaghetti the other day for a funeral and had several ask for the recipe.  I couldn't tell any measurements because I never measure.  I only measure when I bake.

I love to use my crockpot.  I have a few recipes, but I am at work and they are at home.  I actually have a cookbook that is just crockpot recipes and they have very little ingredients.  My friend recently gave me this recipe for the crockpot and it is pretty good.

BBQ Pork Dinner

Sliced pork loin
1 can of rootbeer or diet coke/pepsi
Brown sugar
Sweet Potatoes
Carrots
Bottle of BBQ sauce

Cook on low all day.  The meat will be really tender.

I couldn't remember the recipe when I made it so I didn't use the soda and just used water.  You may need to add a little water if it doesn't look like enough liquid.  My husband doesn't like sweet potatoes so I used regular potatoes and it was still really good.  I don't know why you couldn't use a variety of vegetables.

This is my absolute favorite crockpot recipe:

ANGEL CHICKEN: 1 lb boneless chicken breast, cut into strips 1/4 cup butter or margarine, melted 1 (7 oz) package Italian Dressing Mix 1 can golden mushroom soup 1/2 cup white wine (the alcohol will cook out) 4 oz onion and chive cream cheese   Place chicken in crock pot. Combine butter, dressing mix, soup, wine, and cream cheese until smooth. Pour over chicken. Cook on low 4-5 hours.   Yummiest over a little rice.
And this is my hubby's favorite:

FRENCH DIP SANDWICHES:
4 lbs beef chuck roast, trimmed of fat and cut into strips
1 T minced garlic
1 T rosemary
3 bay leaves
1 cup soy sauce
3-6 cups water
1 medium onion, sliced
Provolone cheese, sliced
Sandwich Rolls

Place meat in crock pot.  Add garlic, rosemary, bay leaves, soy sauce, and enough water to cover meat.  Cook on low for 6-10 hours.  Add onion about one hour before end of cook time.  Remove bay leaves.  Serve with provolone on toasted sandwich rolls, reserving juice for dipping.
