Butternut Squash Mac and Cheese recipe -- lower fat, higher fiber
I made this tonight and I think some of you might like it.
Start by roasting a butternut squash by cutting in half, scooping out the seeds and roasting flesh down on a cookie sheet for one hour at 375. Scoop out 2 cups (or more if you like) and mash in a bowl.
When your squash is almost done boil 2 cups of Ronzoni Smart Elbow noodles until done.
While cooking those 2 you can make the sauce. It only takes about 5 minutes to make.
Saute one small minced onion in one Tablespoon of butter. Add 1 Teaspoon of nutmeg and 1/2 a Teaspoon of white pepper. I used black since white is hard to find. Stir in 1 Tablespoon of flour (I used organic wheat flour), add 1 cup of 1% milk 1 Tablespoon at a time stirring constantly. You know will have a pasty substance. Add slowly an 8 oz package of 2% shredded cheddar cheese and 4 slices of 2% American cheese.
Add the squash to the noodles and stir until mixed well.
Add the sauce to the noodles/squash and mix well.
Put in a casserole dish. I used a 10 inch round. Bake for 30 minutes at 375 degrees.
Here is the total calories if you eat the whole thing. I didn't have time to divide mine into portions and figure out the calories per cup but I am estimating that it is around 190 calories a cup.
I have the total of all ingredients as 1760. So if you divide it up 10 ways it would be 176 calories a serving. I will try and figure out the protein, carbs, and fiber if I have time. I'm trying to pack for Disney and Riley is not letting me.

Sounds good Jennifer. I'll give it a try when I can get the cheese..I may have to make some substitutions for the cheese...and I'll have to use whatever pasta is available here. What's the difference w/the smart noodles? I'll have to go online shopping and see what they are...we only have dumb noodles here in Indonesia! ; )

When I make homemade Mac & Cheese I only use the Ronzoni SmartTaste Elbows and they are great! Like the recipe you posted, I use pureed veggies in mine and it really adds a great consistency and most people don't even know some of the cheese has been swapped out for a more nutritious substance.
