Hi Melissa,

Complex carbohydrates are structurally more complex and take longer to be broken down and digested. They don't produce much of an insulin spike, they stabilize the appetite and don't convert to fat stores as quickly as simple carbs.  Look for whole grains and unrefined carbs (i.e. brown rice and whole wheat pasta).  These also contain vitamins, minerals and fiber which are all essential to better health.  Personally, I lived on mashed potatoes for much of my pregnancy.   Hope this helps!

A few great ideas:

Spinach Whole Barley Grapefruit
Turnip Greens Buckwheat Apples
Lettuce Buckwheat bread Prunes
Water Cress Oat bran bread Apricots, Dried
Zucchini Oatmeal Pears
Asparagus Oat bran cereal Plums
Artichokes Museli Strawberries
Okra Wild rice Oranges
Cabbage Brown rice Yams
Celery Multi-grain bread Carrots
Cucumbers Pinto beans Potatoes
Dill Pickles Yogurt, low fat Soybeans
Radishes Skim milk Lentils
Broccoli Navy beans Garbanzo beans
Brussels Sprouts Cauliflower Kidney beans
Eggplant Soy milk Lentils
Onions Whole meal spelt bread Split peas
Tomatoes
