A few recipes - stuffed cheeseburgers and zucchini "pizza"

THought I would share!
OK so I was experimenting for dinner tonight...

Zucchini "pizza"
1 cup shredded zucchini  squeezed dry
1/4 cup shredded parmesan
1 egg
salt & pepper
garlic powder to taste

mix all together - pat onto a well greased sheet pan - bake about 20 minutes at 400 degrees until browned and "dried out" a bit (not so juicy) top with sauce, mozzarella or toppings of your choice - broil for a few minutes until cheese is melted!

Oh this is so yummy! I didn't cook mine quite long enough so it was still soft - tastes SO good though! I did a white version with a little ricotta and fresh mozzarella on top

STUFFED Cheeseburgers

suggested fillings

sautee 1/2 of a large onion until brown and carmelized
bacon - fried crisp
any variety of cheeses
sautted mushrooms
use your imagination!

1 pound ground beef (I use 85% lean so they don't dry out on the grill)
salt & pepper to taste
1/2 teaspoon worsteshire sauce
mix together - barely (the more you work the meat the tougher it gets)
form into thin patties (about 1/2"), using your fingers make a little "lip" around the edge of the patties. Put the fillings in the middle (don't over do it or they'll pop! lol) of 1/2 of the patties. Take a "plain" patty and top the filled patty. Pinch together the edges so the filling doesn't seep out. Grill to desired doneness.

I put bacon, onions and cheddar in mine, bacon, onions and american cheese in Chris'

So yummy!! This makes a great family dinner because you can serve everyone else's on rolls or with tater/mac salad and have yours just as is on the plate!

cheeseburger sounds yummy...I don't like zucchini so I might pass on that one.  I'll definitely give the burger a try.

That sounds fantastic!!
There is this restaurant here that sells a burger that is stuffed with cheese and sounds so delicious.  They said they only use American (I believe) cheese though because it is the only one that truly melts.

I find cheddar melts quite well - but in this case you could use anything. Swiss and Jack also melt (Jack is what they usually make quesadillas with!)

I should have mentioned too that you can do this with any ground meat - chicken, turkey, pork, veal, lamb etc.

Oh I will be making the cheeseburgers for my family tomorrow.Its a little too late now but those sound great!!!!!!!!!!!!

Zucchini is seriously one of my main food groups - I'll have to try this. Another great thing to do with it is to slice it lengthwise into thinnish strips, grill it, and then use it in place of lasagna noodles. It works well and tastes GREAT!

The zucchini one sounds great....and I do believe I have some in the fridge downstairs!

I make stuffed burgers too...I like to put feta cheese and olives in mine.
