Ok I need some ideas for a good casserole type of dinner.   Here's the situation....our pastor was displaced from his home for the last month.  They are able to move into their new home on Saturday and we were hoping to make dinner for his family to hopefully help make life a little easier on them.  There are 4 in their famil...mom, dad, and 2 teenagers.  I have recipes I could make but was hoping to get some new ideas as well.   Hopefully something that either I can throw together and they can throw in the oven once it's at their house or something that I can cook and will travel well.    You ladies are awesome so I'm sure I'll get some good ideas!

The women in my MOPS group brought our family food after Zach was born, it was great!
One night they brought taco's with the meat mix ready to heat up in the shells and all the fixin's.
Then other nights it was chicken pot pie, pot roast, some chicken noodle thing, then this great chicken pasta salad, it was awesome!
It has roasted chicken cut up, feta cheese, red peppers, cherry tomatoes, Italian dressing and these little pasta things called melon seeds( they are in the Mexican food isle).  Then you put it on spring salad mix.  It was so good, we have been eating it once a week now.
I also like giving homemade macaroni and ham for meals, they can just reheat it.  Or meatloaf is always good, usually already cooked and ready to go.
That is very nice of you guys!

I am not the chef in the family so I wouldn't want to poison anyone with my ideas!!  LOL

But here is another idea....how about a gift certificate for 2 pizza pies?  The money you would have spent on all the ingredients for something would probably equal the cost of 2 pies.  Just another thought.

Hope that helps!

How about pot pies?   Get some individual throw away pie tins and either make a dough or buy a dough.

Make a basic filling with the chicken and then bring different veggies that they may want to throw in their pot pies.  Just have all the stuff cut up.  All they would need to do is throw the filling and veggies of their choice in the pot pie tins, cover with dough, and bake.

Mannicotti...very easy to make and tastes great.  My 14 year old son made it last weekend...and his 'normal' speciality is scrambled eggs.
